Smoked Brisket

One Brisket (About 12 lbs)

1 tbsp per pound of Skipkenny Beef Marinade

1 cup of Skipkenny Mustard Marinade

1 ½ cups of Skipkenny Texas BBQ Rub

1. Trim fat from Brisket (We like to leave about a ¼ inch)

2. Inject brisket with beef marinade

3. Coat top and bottom with mustard marinade

4. Season top and bottom with Texas BBQ rub (Just season the brisket, no need to rub into the mustard marinade)

5. Let brisket rest overnight in refrigerator

6. Smoke brisket at 250 degrees fat side up

7. Wrap with foil at 150 degrees internal temp. (We use an aluminum pan covered with foil)

8. Bring brisket to 200 degrees internal temp. and Remove from smoker.

9. Let rest about an hour

10. Slice against the grain of the brisket

11. Serve with your favorite Skipkenny BBQ sauce on the side and Enjoy!!

BBQ Chicken Thighs

BBQ Chicken Thighs

1/2 cup Skipkenny Texas BBQ Rub

10 chicken thighs

2 bottles of your favorite Skipkenny BBQ Sauce

1. Rinse chicken under cold water and pat dry.

2. Rub chicken with Texas BBQ Rub.

3. Place chicken on grill.

4. Brush chicken with your favorite Skipkenny BBQ Sauce.

5. Grill until chicken internal temp is 170 degrees.

6. Serve with your favorite Skipkenny BBQ Sauce on the side.

Grilled Scallops

Grilled Scallops

2 tbsp of Skipkenny Texas BBQ Rub

12 large scallops

2 tbsp of cooking oil

1. Place scallops in a bowl and coat with cooking oil and Texas BBQ Rub, mixing well.

2. Place scallops on skewers .

 3. Place skewers on grill.

4. Grill scallops for 4-6 minutes turning once until opaque throughout.

5. Serve with your favorite Skipkenny BBQ Sauce on the side.

Grilled Shrimp

Grilled Shrimp

2 tbsp of Skipkenny Texas BBQ Rub

1 lb of shrimp (cleaned and deveined)

2 tbsp cooking oil

1. Place shrimp in a bowl and coat with cooking oil and Texas BBQ Rub and mix well.

2. Place shrimp on skewers.

3. Place skewers on grill.

4. Cook shrimp 2-3 minutes per side until pink.

5. Serve with your favorite Skipkenny BBQ Sauce on the side.
